HALLOUMI PITA WITH SALAD AND BLACK FOREST HAM

(Χαλουμόπιτα)

Light lunches do not have to be boring or flavorless. The haloumopita (pronounced ha-loo-mo-pee-ta) is a Cypriot-inspired dish, which reminds me of my second home country. There is not much cooking involved, unless you decide to follow the recipes for Greek Pita Bread and Hummus 114, 100). Keep it as simple as possible, and let the flavors do the talking. Honest, clean ingredients create the perfect marriage of flavor combinations, for your taste buds only!

Ingredients

4 pieces of Greek Pita Bread (page 114)

4 fresh basil leaves

2 fresh mint leaves

1 tsp. extra-virgin olive oil

1 9 oz. package halloumi cheese

8 cherry tomatoes (halved)

4 baby cucumbers (sliced)

Kalamata olives (optional)

Beetroot hummus (optional)

8 slices Black Forest ham

Olive oil to drizzle

Method

1. Preheat the oven to 350°F and heat the pita breads thoroughly (approximately 5 minutes), making sure they don’t burn.

2. In a blender, mix the basil and mint leaves with the extra-virgin olive oil.

3. Slice the halloumi cheese and brush the slices with the basil and mint sauce. Place the slices on a griddle pan and cook. Turn over when golden brown.

4. Arrange the vegetables on a plate along with the beetroot hummus and Black Forest ham. Drizzle with oil.

5. Remove the pita breads from the oven, sandwich the halloumi slices between two pitas and cut into quarters. Place on the plate and enjoy!
